Revise installation instructions

It became apparent during the Algeria workshop that we perhaps do not need to use GDAL. This would make installation easier, as OSGeo4W would not be needed and learners on Windows could simply install Python from Python.org, which includes pip (should verify), and then use the PowerShell to manage Python modules and run Jupyter Notebook.
