Change Quarto theme/template

Let's explore some alternative themes and/or templates for the blog. We can try to make it as consistent with pslmodels.org within the context of the off-the-shelf Quarto themes and templates.

One issue I've noticed, though, is that changing these in about.qmd and _quarto.yml has not affected the styling on the rendered site.
