[Feature] enable Pydantic 2.* support for dbt-metricflow (MetricFlow 0.207 release timeline)

Hey!

We’ve been trying to integrate dbt-metricflow into our data stack but encountered compatibility issues with our current architecture. The primary blocker is the pydantic>=1.10.0, <1.11.0 requirement. We noticed that this dependency was relaxed in a pre-release here.

Do you have any plans to officially release MetricFlow 0.207 in the near future?

Describe alternatives you've considered

We considered downgrading our stack to enable MetricFlow, but it would result in disruptive changes to core parts of our platform, making it impractical to use other essential packages.

This release #1615 is going to go out shortly and a new version of dbt-metricflow will be published that should have relaxed requirements. It's currently blocked on the workflow to run the publish call to Pypi, but hopefully that will be resolved soon.
