So I was looking at the MediapipeTrackingParams and saw that static_image_mode is set to True by default. I think we should have this as False - as the non-static image mode tracking is a bit smoother and less jumpy!

Made a PR for this. We can merge it with the YOLO bounding box PR or separately, depending on how close the bounding box PR is.
