Make it work with Azure Monitor OpenTelemetry

Do you have any plans to make this sink work with Azure Monitor OpenTelemetry? Because currently it doesn't, and the "classic" Application Insights SDK is being deprecated. Or would this be a case of writing a separate, new sink?

Hi @breggles! I think the differences in dependencies and configuration mean that the Azure OpenTelemetry distro would need to be targeted by a new sink. If you (or anyone following along) decide to give building one a shot, and need eyes on it, please don't hesitate to drop us a line here, or @ me wherever the new sink is published. Cheers!
