Just make an issue for switching to environments. I think there could be a few complexities there for our current workflow

This would entail adding a specific release environment (under https://github.com/ssl-hep/ServiceX_frontend/settings/environments).

This is covered to some extent in the Publishing with a Trusted Publisher docs.
