CU-8697c86rf: Update docs build requirements

Update dependencies for documentation builds.

Some inconsistencies were introduced with the python 3.12 update #510 (and to an extend the pydantic 2 update #493 ).

This PR should fix these issues.

I've verified that the docs would build now by activating this branch as well for a while.
I've since deactivated it again (since we obviously don't need it in the long run).
