ENGAGE DOCS: Update eac-as-manage-data.md

First commit of changes to this topic requested by Spencer Perry.

This is my first time committing and submitting a PR entirely within GitHub (I'm used to the command line and GH Desktop) and there are other changes of similar scope coming to this same document. I will determine through that process whether my second commit can be applied to this PR or if I must submit a new PR for that second change.

This first change is an addition of two table rows and a removal of one table row.
